Mexican Omelette

Ingredients
- 4 Eggs
- salt and pepper
- ½ avocado
- cheddar cheese
- handful cherry tomatoes
- ½ cup onions
- 1 clove garlic
- 2 tbsp olive oil
- 2 tbsp crème fraiche
- 1 sliced jalapeno
- 100g feta cheese
Method
- Saute ingredients on medium heat for 3 mins. Add salt and pepper.
- Whisk eggs in bowl and add salt & pepper.
- Fry egg on medium heat.
- Top egg with ingredients. Fold omelette.
- Top omelette with cheese and garnish.
- Serve and enjoy.
