1/2 cup broccoli
2 eggs, whisked
2/3 cup breadcrumbs
1/4 cup spring onion, chopped
1 cup shredded cheddar cheese
2 cloves of crushed garlic
Method
Break the broccoli head into florets and add them to your pan of boiling water.
Cover with a lid and leave to cook until soft (about 8 minutes)
Chop the broccoli finely and add the cheese, garlic, spring onion, breadcrumbs, eggs, salt and black pepper and mix well.
Preheat your oven to 180°C and allow your mixture to cool for approximately 15-20 minutes.
Cover your baking tray with a baking sheet and shape small balls out of the broccoli mixture.
(Makes roughly 18 balls, depending on the size) Bake for 20 minutes, until lightly golden brown – turning them on the other side half the way through baking.
